Potatoes Tempura

These are excellent and make a great starter dish. The taste is amazing and they are really easy to do. The recipe tells you to fry them in a skillet as potato cakes. I made them more into balls and cooked them in a fry daddy. They are good either way, just a personal preference on how you want to cook them.

Potatoes Tempura
2 medium potatoes raw
2 carrots
1 small onion
1 1/2 cups flour
1 cup water
2 eggs
salt and pepper to taste

Put vegetables through a grater, large grater size. In large bowl mix flour, water, eggs, salt and pepper. Add vegetables to batter. Drop by spoon into hot oil in skillet fry like potato cakes. Drain. Serve with soy sauce.
